Incidentally, many Lelit steam wands are “cool touch,” but check the user manual first to make sure. Trust me, burning your fingers on a steam wand really hurts!
Here’s the skinny on using a Lelit steam wand to create silky microfoam. And if you don’t get it right the first time, don’t give up!
Start by purging the steam wand to remove any excess water. I recommend using a towel so you don’t soak your kitchen counter.
Add around six ounces of milk to your pitcher, then submerge the steam wand tip just below the surface.
Gently turn the steam dial until you can hear steam entering the milk. At this point, keep the tip submerged just below the surface to prevent a rush of bubbles.
With the pitcher at an angle, start to aerate the milk. This is the part that takes practice; you want to “stretch” the milk without causing big bubbles to form.
Once the volume of milk has increased, submerge the wand and decrease the angle of the pitcher. You’re aiming to create a vortex, which will texture the milk.
Keep the palm of your hand on the side of the pitcher and stop the steaming process when it becomes too hot to keep it there.
If all goes well, you’ll have perfectly textured milk foam. Don’t forget to wipe the wand with a damp cloth when you’re done. And before pouring your drink, swirl the pitcher to keep the milk and foam incorporated.
